做法(fǎ ):春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成(chéng )段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右(yòu )。再加入生抽、老抽、蚝油(yóu )翻炒均(jun1 )匀,加(jiā )入少量清(qīng )水(shuǐ )半掩住春(chūn )笋,盖(gài )上锅盖大火煮(zhǔ )开后转中火。煮到(dào )水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
