做法:春笋切成(chéng )片后加(jiā )少许盐捞出后用清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧(shāo )热(rè ),倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分(fèn )钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到水快熬干的时候加入盐(yán ),翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
