做法:春笋切成片后加少许盐(yán )捞(lāo )出后用(yòng )清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少量清水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后转中火(huǒ )。煮(zhǔ )到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅(guō )盖焖。
