做法(fǎ ):春笋切(qiē )成片后加少许(xǔ )盐(yán )捞出(chū )后用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖(gài )大(dà )火煮(zhǔ )开后转中(zhōng )火。煮到水快熬(áo )干(gàn )的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
