做法:春笋(sǔn )切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量(liàng )清水半掩(yǎn )住春笋,盖上(shàng )锅盖(gài )大火煮开后转中火(huǒ )。煮(zhǔ )到水快(kuài )熬干的时(shí )候加入盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
