做法:春笋切成片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清(qīng )水半掩住春(chūn )笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到(dào )水快熬干的时候加入盐(yán ),翻炒均匀(yún )稍收汁时(shí )盖(gài )上(shàng )锅盖(gài )焖。
