做法(fǎ ):春笋切成片(piàn )后加少许(xǔ )盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再(zài )加(jiā )入(rù )生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水半掩住春笋,盖上锅(guō )盖大火煮开后(hòu )转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
