做法:春笋(sǔn )切成(chéng )片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片(piàn ),葱切成段(duàn )。锅烧热(rè ),倒入2勺(sháo )油(yóu ),放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
