做法:春笋切成片后加少许盐(yán )捞(lāo )出后用清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅(guō )烧热,倒入2勺油,放(fàng )入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春(chūn )笋,盖上锅(guō )盖(gài )大火煮开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
