做(zuò )法:春笋(sǔn )切成片(piàn )后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量(liàng )清水半掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中(zhōng )火(huǒ )。煮(zhǔ )到水快熬干的时(shí )候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
