做法:春笋切(qiē )成片后加少许盐捞(lāo )出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅盖大(dà )火煮开(kāi )后转(zhuǎn )中(zhōng )火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁(zhī )时(shí )盖上(shàng )锅盖焖(mèn )。
