做法:春笋切成片后加(jiā )少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜切(qiē )片(piàn ),葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分(fèn )钟左(zuǒ )右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋(sǔn ),盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
