做法:春(chūn )笋切成片(piàn )后(hòu )加少许盐(yán )捞出后(hòu )用清水浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上(shàng )锅(guō )盖大火煮(zhǔ )开后转中火(huǒ )。煮到水快熬干的(de )时候加入盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
