做法:春笋切成片后加少许盐捞出后用(yòng )清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生(shēng )姜、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半(bàn )掩住(zhù )春笋,盖上锅盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
