做法:春笋切(qiē )成片后加少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋(sǔn ),盖上(shàng )锅(guō )盖大火煮开(kāi )后(hòu )转中火。煮到水快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍(shāo )收汁时盖上锅盖焖。
