做法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切(qiē )成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱(cōng )段翻(fān )炒(chǎo )1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋(sǔn ),盖上锅盖大火煮开后(hòu )转中火。煮(zhǔ )到水快(kuài )熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
