做法:春笋(sǔn )切成片后(hòu )加少许盐捞出后(hòu )用(yòng )清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩(yǎn )住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮(zhǔ )到水快熬干的时(shí )候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
