做法(fǎ ):春笋切成(chéng )片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
