做法:春笋(sǔn )切成片后加少许(xǔ )盐(yán )捞(lāo )出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半(bàn )掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬(áo )干的(de )时候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
