做法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁(zhī )时(shí )盖(gài )上锅(guō )盖焖。
