做法(fǎ ):春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽(chōu )、蚝油翻(fān )炒(chǎo )均匀,加(jiā )入少量(liàng )清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮开(kāi )后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
