做(zuò )法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒(dǎo )入2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮到(dào )水快熬(áo )干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
