做法:春(chūn )笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大(dà )火煮开后转中(zhōng )火。煮到水(shuǐ )快熬(áo )干(gàn )的时(shí )候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
