做法:春笋切成片(piàn )后加少许盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水(shuǐ )半(bàn )掩(yǎn )住春笋(sǔn ),盖上锅盖大火(huǒ )煮开后转(zhuǎn )中(zhōng )火。煮(zhǔ )到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
