做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻(fān )炒(chǎo )1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火煮开后(hòu )转(zhuǎn )中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
