做法:春(chūn )笋切成片后加少(shǎo )许盐捞出后(hòu )用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右(yòu )。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋(sǔn ),盖(gài )上锅盖大(dà )火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的时候加入(rù )盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上锅盖焖(mèn )。
