做法:春笋切成片后加(jiā )少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片,葱切(qiē )成(chéng )段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻(fān )炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水半掩住(zhù )春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
