做法:春笋切成片后(hòu )加(jiā )少(shǎo )许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量(liàng )清(qīng )水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快(kuài )熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
