做(zuò )法:春笋切成片后加(jiā )少(shǎo )许盐捞出后用清水浸(jìn )泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油(yóu ),放(fàng )入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中(zhōng )火。煮到水快熬(áo )干的时候加入盐(yán ),翻炒均(jun1 )匀稍收汁时(shí )盖上锅盖焖。
