做法(fǎ ):春笋切(qiē )成片后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛(niú )肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮(zhǔ )到(dào )水快熬干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
