做法:春(chūn )笋切成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛(niú )肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入(rù )少(shǎo )量清水半掩住春笋(sǔn ),盖上(shàng )锅盖大(dà )火煮开(kāi )后转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
